Sheffield's bat waggle started much smaller. Over the years, it has eveolved to what it is now.

I saw an interview with Sheffield on ESPN earlier this season. In the piece, Sheffield stated he uses his trademark wiggle as a way to force himself to stay back on a pitch, as he was jumping on pitches too early. So, there you have it.
