What should be the range of speed for an eleven year old. Just received the swingmate and want to establish a resonable bat speed goal.

Depends on size, maturity, experience, etc.
My just 11 yr old is small for his age. He has gotten his -10 to high 50's but probably has a game swing more in the low 50s or high 40s.
I've heard of smaller, younger kids up in the high 60s to 70. Can't imagine much more at that age.
It also depends on bat weight and length.
My 14 yr old, also small for his age is closing in on 70 mph. But he is swinging a 31' 28 oz -3 bat. He gains 10 mph with a -9.
