Hi Chris,
Have you tried the "Drop Ball" drill?
Stand in a batters readty position and have someone stand close enough to drop a ball in the hitting zone without getting hit with the bat and drop the ball from the highest point he can (perhaps standing on a bucket will help at first) the batter must somehow catch up to the dropping ball to hit it(very important that the batter attempt to hit the ball at its lowest point in the strike-zone, not high in the zone. The batter must keep his eye on the ball all the way through the hitting zone in order to hit the ball while its moving.
This drill accomplished three things, bat speed imnproves dramatically, it keeps your eye on the ballall the way while swinging a bat, and if the batter can consistinly hit the ball in this drill, he will realize that it is much more dificult to hit a ball dropping than is hitting a pitched ball.
